Thai BBQ Chicken (or shroom) Wings - Susan Aretz

Susan knows what she's doing with fire and flavour. Her book is packed with recipes that work, and we're honoured to be part of it. I'm a vegetarian, so I made this with oyster mushrooms and it is crazy good.

Thai BBQ Chicken Wings (or oyster mushrooms)

Ingredients:

  • 1 stalk lemongrass, chopped
  • 5cm ginger, minced or finely grated
  • 2 garlic cloves, minced
  • 3 tbsp fish sauce (or vegan fish sauce)
  • 1 tbsp sesame oil
  • 1 tbsp sunflower oil
  • ½–1 tbsp sugar
  • Juice of ½ lime
  • ½–1 tbsp Yum Phrik crispy chilli oil
  • 500g chicken wings (or oyster mushrooms for vegan)

Method:

  • Mix lemongrass, ginger, garlic, fish sauce, sesame oil, sunflower oil, sugar, lime juice, and Yum Phrik together. 
  • Marinate the chicken (or mushrooms) in this mixture (minimum 30 minutes, up to 24 hours)
  • Heat your BBQ to 175°C (direct heat), but don't use too many coals. Fat and marinade will drip during cooking—you want to avoid flare-ups and burnt chicken. 
  • Remove the chicken and let excess marinade drip off. 
  • Keep the remaining marinade to brush on the chicken while grilling.
  • Grill the chicken until cooked through and golden brown. Make sure the internal temperature reaches 72°C.
