Summer Chickpea Salad

Chickpeas are high in protein, creamy, and nutrient-packed and, if my daughter is anything to go by, kids love the texture too. Throw this salad together in minutes. It’s perfect as a summer meal, or packed into a jar for an easy office lunch.

Ingredients
- 1 can of chickpeas, drained and rinsed
- 1 teaspoon Citir Biber
- 1 courgette, peeled into ribbons
- 2 tomatoes, cut into bite-size chunks
- 1 cucumber, halved, then sliced
- 1 small bag rucola (or your fav salad green)
Dressing
- 1/4 cup Yoghurt
- half a Lemon squeezed
- 1 teaspoon Citir Biber
- 1 tablespoon Olive Oil
- salt to taste
Method
- Drain chickpeas, mix with 1 teaspoon of Citir Biber
- Pan fry over medium heat until they pop and crisp up a little.
- Mix all dressing ingredients together.
- Mix salad and dressing.
- Enjoy!
