Turkish chickpea salad citir biber crispy chilli oil dressing

Summer Chickpea Salad

Chickpeas are high in protein, creamy, and nutrient-packed and, if my daughter is anything to go by, kids love the texture too. Throw this salad together in minutes. It’s perfect as a summer meal, or packed into a jar for an easy office lunch.

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 1 teaspoon Citir Biber
  • 1 courgette, peeled into ribbons
  • 2 tomatoes, cut into bite-size chunks
  • 1 cucumber, halved, then sliced
  • 1 small bag rucola (or your fav salad green)

Dressing

Method

  1. Drain chickpeas, mix with 1 teaspoon of Citir Biber
  2. Pan fry over medium heat until they pop and crisp up a little. 
  3. Mix all dressing ingredients together. 
  4. Mix salad and dressing. 
  5. Enjoy!
