
Spring onion pancake - quick and easy
The amount of spring onions in my fridge at any given time is embarrassing! So today, a great way to use up a bunch in this quick delicious plant-based breakfast.
Ingredients
🌶️ Spring onions
🌶️ Coriander
🌶️ 1 TSP Sesame oil
🌶️ 1/2 TSP Magic spice mix (msg, white pepper, salt, sugar)
🌶️ 1/4 TSP Baking powder
🌶️ 1/4 cup Rice flour
🌶️ 1/2 cup Flour
🌶️ water
🌶️ Sesame seeds
🌶️ Crunchy Spice
🌶️ Avocado
🌶️ Vietnamese pickles
Method
- Finely slice spring onions and coriander
- Mix with sesame oil, baking powder, flours and magic spice mix. Add enough water to make a batter.
- Heat Crunchy Spice oil in a pan.
- Add the batter. Sprinkle with sesame seeds.
- Leave until cooked on base, flip and cook other side.
- Done! Top with avo, pickles and crunchy spice.
