
Crispy Crunchy Thai Cucumber Salad
Endlessly customisable, always delicious!
A Thai twist on the classic cucumber salad. Adjust to your preferences, for a single serve use a quarter of the recipe and shake it all together in a jar.
Ingredients
1 Cucumber, sliced or smashed
2 tsp soy sauce
1 heaped teaspoon Yum Phrik
1 teaspoon (vegan) fish sauce
Crushed roasted cashews
coriander leaves
pinch sugar
squeeze lime
Shake it up in a jar, mix it in a bowl, taste and adjust with more lime, a little salt, or another scoop of Yum Phrik.
