Chicken fried rice with yum phrik thai crispy chilli oil and rival foods pulled chicken

"Chicken" Fried Rice

I met with Tom of Rival Foods and we tried our products together. Rival Foods is a Dutch company that uses something I don't really understand called Shear Cell Technology to create a chicken like structure out of soy, peas and wheat, all clean label ingredients you recognise and can pronounce. 

I was sceptical!

Until we crisped up the chicken in some Yum Phrik oil, then tossed in some rice. The result was so delicious I made it again when I got home. 

Ingredients

  • 200 g pre-cooked rice
  • 100 g Rival Foods pulled chicken
  • 2 spring onions, sliced
  • Yum Phrik
  • 1 tablespoon soy sauce

Method

  • Heat 1 tbs oil from Yum Phrik in a frypan.
  • Add the pulled chicken, leave to brown for 2-3 mins, then stir. Cook a further 2 minutes until lots of brown crispy bits. Remove from the pan.
  • Add another tbs oil from Yum Phrik to the pan. Add spring onions and cold rice.
  • Stir gently to combine.
  • Sitr in the chicken, and a splash of light soy sauce. Finish with a full spoon of Yum Phrik including the crispy bits.

NOTES: Optional to add some peas, pak choi or preferred vegetables.
