Borek inspired Pinwheels
I was flipping through Turkish Express by Hale Amus and was inspired to use a store bought dough to make borek. The AH has a rectangle XXL pizza dough that seemed perfect! (I tried it first with the round one which is a bit of a hassle shape wise, so go big!). These come together in the time it takes the oven to heat up, and S loves making them with me. I add Citir Biber to half and keep half spice free.

Ingredients
- Store bought pizza dough - rectangle if you can find it
- Feta (1 regular store size block)
- Spinach (about 200g fresh)
- Fresh herbs, finely cut - I use what's in the fridge or garden, mint, coriander, parsley, dill are all great options.
- Citir Biber
Method
- Heat the oven to 200C
- Quickly wilt the spinach - I throw it all in the hapjespan with 2 tablespoons water, cover with a well fitting lid and turn on the heat. In 3 minutes it's soft. Rinse well to cool it down, then use your hands to squeeze out the water.
- Unroll your dough,
- Spread the spinach over it.
- Crumble the feta over
- Sprinkle the herbs
- Drizzle Citir Biber on the amount adults will eat
- Tightly roll it up
- Slice into 2cm thick rounds
- Place on a silicon or parchment lined baking tray
- Bake for 20 minutes or until golden brown
