Sichuan Peppercorns - dahongpao

Latest harvest sichuan peppercorns ( hand-harvested during August in the mountains of Sichuan), the smell and taste of which is transformational. It is exceptionally rare to find fresh and high quality Sichuan pepper outside of China.  The real dahongpao grow at high altitudes making this a more rare sichuan peppercorn, prized for it's full woodsy flavour, heady aroma, lightly roast then crush to release the full properties. Manually processed and air-dried to open into the beautiful 6 petal flower for the best flavour. Sorted to remove stems and seeds - as this is a manual process a few may remain, but minimal.

Be warned: these are a lot stronger than what you get from the toko, so use less - you can always add more if needed.
