vegan alfredo with tofu and cashew milk and pizza chilli crisp

Vegan Alfredo-esque

Super quick vegan alfredo made from scratch, when the flavours are balanced well this is so cosy and comforting! 

I was gifted a mylky milk maker, and while cleaning it is a little annoying (actually just undoing it is, cleaning is fine), the ability to make cashew milk in one minute is so great! No soaking nuts or pre-planning. 

Ingredients

Pasta of choice - I actually used volkoren mee noodles

Cashew milk ingredients

  • 100g raw cashews
  • 750mL water

Sauce ingredients

  • 1/2 block of tofu
  • 1/2 cup cashew milk 
  • 1/2 teaspoon vegemite (optional)
  • 1 spoon Pizza Chilli Crisp
  • Nutritional yeast
  • salt
  • mustard
  • spring onions and Pizza Chilli Crisp to garnish

 

Method

Put the pasta on to boil

Cashew milk method

  1. Add cashews and water to mylky, and turn on.
  2. One minute later boom cashew milk. 
  3. Pour into jug. 

Sauce method

  1. To a blender or food processor add tofu, vegemite, cashew milk, salt, mustard and nutritional yeast. Blend until smooth. 
  2. When pasta is cooked strain, then add pasta and sauce to a hapjespan. Mix together well until all pasta is coated in the sauce. 
  3. Serve, garnished with spring onions and Pizza Chilli Crisp.
