Turkish Waffles
Waffle Makers - one of those things you use all the time, or forget about and leave to collect dust!
I have to admit I loved the idea of one, but in reality it does not get enough use. So I've started trying it for different things, because it cooks so quickly, makes things deliciously crispy and my daughter always finds waffled things fun.
Which is how we ended up with these 'Turkish waffles' which are indeed neither turkish, or traditional waffles. What they are is quick, easy and delicious!

Ingredients
- Puff Pastry Squares - 2 per 'waffle', defrosted
- Jar or Can of aubergine puree, from the toko - 1 heaped tablepsoon per waffle
- Citir Biber - 1/2 teaspoon per waffle, or to taste
Method
- Preheat waffle iron
- Mix aubergine (1 heaped tablespoon per person) with Citir Biber (1/2 teaspoon per person)
- Place puff pastry sheet into a bowl, so the edges curve up a little
- Add one heaped tablespoon of aubergine mix into the centre of the puff pastry
- Place second sheet of puff pastry on top and press all the edges well to seal.
- Carefully place puff pastry parcel into waffle maker.
- Optional - brush top pastry with Citir Biber oil
- Toast until golden and crispy.
