Smashed Pea Toast with Feta & Crunchy Spice Recipe
Upgrade Your Brunch with Green Peas Instead of Avocado!
Forget avocado, green peas are popping, affordable and never a disapointment. This basic recipe elevates your weekend brunch from boring to brilliant! Go all out and add a poached egg if you want to impress.
Ingredients
- High quality sourdough
- Butter (or vegan butter)
- Green peas - frozen or fresh if in season
- Fresh herbs - mint or coriander work well
- Citrus - A squeeze of lemon or lime
- Feta - or vegan alternative
- Crunchy Spice Chinese Crispy Chilli Oil
- Salt and Pepper to taste.
- poached egg (optional)
Method:
- Toast bread until golden, then slather with butter
- Microwave peas (in glass, don't microwave plastic, that's a crazy idea), until softened.
- Mix 3/4 of the peas with a squeeze of citrus and finely cut herbs, mash well. Season with salt and pepper. Mix through remaining 1/4 peas for texture.
- Generously spread smashed peas on toast. Sprinkle with crumbled feta and herbs.
- Drizzle with Crunchy Spice crispy chilli oil
