Smashed Pea Toast with Feta & Crunchy Spice Recipe

Upgrade Your Brunch with Green Peas Instead of Avocado!

Forget avocado, green peas are popping, affordable and never a disapointment. This basic recipe elevates your weekend brunch from boring to brilliant! Go all out and add a poached egg if you want to impress. 

 

Ingredients

  1. High quality sourdough
  2. Butter (or vegan butter)
  3. Green peas - frozen or fresh if in season
  4. Fresh herbs - mint or coriander work well
  5. Citrus - A squeeze of lemon or lime
  6. Feta - or vegan alternative
  7. Crunchy Spice Chinese Crispy Chilli Oil
  8. Salt and Pepper to taste.
  9. poached egg (optional)

Method:

  1. Toast bread until golden, then slather with butter
  2. Microwave peas (in glass, don't microwave plastic, that's a crazy idea), until softened. 
  3. Mix 3/4 of the peas with a squeeze of citrus and finely cut herbs, mash well. Season with salt and pepper.  Mix through remaining 1/4 peas for texture. 
  4. Generously spread smashed peas on toast. Sprinkle with crumbled feta and herbs. 
  5. Drizzle with Crunchy Spice crispy chilli oil
