Quick Delicious Chickpea Curry

A healthy, quick & easy meal with only 6 ingredients!

Ingredients

  • 2 tbsp Curry Bomb crispy chilli oil 
  • 1 large onion, finely chopped
  • 1 can (400g) chickpeas, drained & rinsed
  • 1 can (400g) crushed tomatoes
  • 1 can (400ml) coconut milk
  • 3 handfuls fresh spinach
  • Salt & black pepper, to taste

Preparation

  • Heat 2 tbsp Curry Bomb in a pan over medium heat.
  • Add onion and cook for 5 minutes or until softened.
  • Stir in crushed tomatoes and let cook for 5 minutes.
  • Stir in chickpeas, coconut milk, and season with salt & pepper. Simmer for 10 minutes.
  • Add spinach and stir until wilted, about 2 minutes.
  • Scoop into bowls and serve with rice, naan, or on its own!
  • Like a bit more spice? Top it with Curry Bomb of course. 

Leftovers are delicious in a wrap, then heated in a panini press.
