Quick Delicious Chickpea Curry
A healthy, quick & easy meal with only 6 ingredients!
Ingredients
- 2 tbsp Curry Bomb crispy chilli oil
- 1 large onion, finely chopped
- 1 can (400g) chickpeas, drained & rinsed
- 1 can (400g) crushed tomatoes
- 1 can (400ml) coconut milk
- 3 handfuls fresh spinach
- Salt & black pepper, to taste
Preparation
- Heat 2 tbsp Curry Bomb in a pan over medium heat.
- Add onion and cook for 5 minutes or until softened.
- Stir in crushed tomatoes and let cook for 5 minutes.
- Stir in chickpeas, coconut milk, and season with salt & pepper. Simmer for 10 minutes.
- Add spinach and stir until wilted, about 2 minutes.
- Scoop into bowls and serve with rice, naan, or on its own!

Leftovers are delicious in a wrap, then heated in a panini press.
