Matcha Crunchy Spice Cookies

We had a craving for something soft, chewy, and just a little bit surprising, so we threw together these Matcha Crunchy Spice Cookies.

Earthy matcha, buttery richness, and those tiny spicy-sweet bits that melt into each bite.

They’re simple, fast, and the kind of cookie you’ll want with your afternoon tea (or straight off the tray).

Ready in 1 hour & 30 minutes
Serves 2-3 servings

Ingredients

  • 1 egg
  • 150 grams sugar
  • 50g butter (softened)
  • 10 grams crunchy spice (with bits)
  • 120 grams flour
  • 1 tsp baking powder
  • 2 tsp matcha (nomads matcha, traditional grade)
  • pinch salt
  • icing sugar or sesame seeds (or half and half like I did)

Method

  1. Whisk egg and sugar until fluffy
  2. Add melted butter and crunchy spice and mix well
  3. Add matcha, flour, salt and baking powder
  4. Mix well.
  5. Use a cookie scoop to scoop into balls, then coat in sesame seeds or icing sugar
  6. NOTE: Recommended to refrigerate for 1 hour here (or you get still delicious but flat ones like I did!)
  7. Pre-heat oven to 180C
  8. Bake for 15 minutes or until the top is set, they will still look a bit soft.
  9. Let cool for 10 minutes on the tray to firm up
