
Matcha Crunchy Spice Cookies
We had a craving for something soft, chewy, and just a little bit surprising, so we threw together these Matcha Crunchy Spice Cookies.
Earthy matcha, buttery richness, and those tiny spicy-sweet bits that melt into each bite.
They’re simple, fast, and the kind of cookie you’ll want with your afternoon tea (or straight off the tray).
Ready in 1 hour & 30 minutes
Serves 2-3 servings
Ingredients
- 1 egg
- 150 grams sugar
- 50g butter (softened)
- 10 grams crunchy spice (with bits)
- 120 grams flour
- 1 tsp baking powder
- 2 tsp matcha (nomads matcha, traditional grade)
- pinch salt
- icing sugar or sesame seeds (or half and half like I did)
Method
- Whisk egg and sugar until fluffy
- Add melted butter and crunchy spice and mix well
- Add matcha, flour, salt and baking powder
- Mix well.
- Use a cookie scoop to scoop into balls, then coat in sesame seeds or icing sugar
- NOTE: Recommended to refrigerate for 1 hour here (or you get still delicious but flat ones like I did!)
- Pre-heat oven to 180C
- Bake for 15 minutes or until the top is set, they will still look a bit soft.
- Let cool for 10 minutes on the tray to firm up
