Fried Rice Paper Eggs

I saw a version using just an egg yolk, and I thought, this looks delicious but honestly who has time to deal with excess egg whites! So we made this, and it is so delicious, quick and easy. brunch

Ingredients

  • 1 sheet rice paper
  • 3 mushrooms, sliced
  • 1 egg
  • Crunchy Spice
  • salt and pepper
  • spring onions, finely sliced
  • pickled red onions 

Method

  • Add a little oil from Crunchy Spice to a pan, and pan-fry mushrooms until cooked through.
  • Make a little gap in the centre, and crack in an egg. Season.
  • Cover the pan for 2 minutes, checking if egg is cooked.
  • Heat oil in a pan big enough to hold rice paper
  • Add rice paper, pushing down the edges and it will quickly puff up.
  • Drain oil and place on a plate.
  • Top with the mushrooms and egg
  • Sprinkle spring onions and pickled onions.
  • Finish with a drizzle of Crunchy Spice.
