
Fried Rice Paper Eggs
I saw a version using just an egg yolk, and I thought, this looks delicious but honestly who has time to deal with excess egg whites! So we made this, and it is so delicious, quick and easy. brunch
Ingredients
- 1 sheet rice paper
- 3 mushrooms, sliced
- 1 egg
- Crunchy Spice
- salt and pepper
- spring onions, finely sliced
- pickled red onions
Method
- Add a little oil from Crunchy Spice to a pan, and pan-fry mushrooms until cooked through.
- Make a little gap in the centre, and crack in an egg. Season.
- Cover the pan for 2 minutes, checking if egg is cooked.
- Heat oil in a pan big enough to hold rice paper
- Add rice paper, pushing down the edges and it will quickly puff up.
- Drain oil and place on a plate.
- Top with the mushrooms and egg
- Sprinkle spring onions and pickled onions.
- Finish with a drizzle of Crunchy Spice.
