
Vegan Thai Laab - family friendly quick recipe
Laab is one of my all time favourites. Healthy, quick and perfect for summer. My Dad's wife is Thai and eats it so spicy I'm scared to try it 😂
Here's my quick vegan version, playing with textures, and having the spice added after so even my daughter can enjoy it.
Ingredients
- 1/2 cauliflower
- 1/2 block tofu
- 4 cloves garlic, minced
- 1 teaspoon ginger powder
- 1 thumb finger, grated
- 2 limes, zest and juice
- 2 tablespoons vegan fish sauce (Taim vegan fish sauce)
- Pinch salt
- Pinch sugar
- 1 shallot (or red onion) finely sliced
- 1 bunch coriander
- 1 bunch mint
- 1 lettuce
- 1/4 cup glutinous rice
- Chili flakes
- Yum Phrik
Method
- Add rice to a dry frypan and fry over medium low heat until golden, stirring often so it colours evenly.
- Blend until fine powder.
- Finely slice cauliflower, you can decide the texture I like it a bit mixed so it cooks unevenly. You can also pulse it in a food processor, grate it, or buy precut cauliflower rice.
- Finely diced tofu.
- Heat wok, add 2 tablespoons oil. Pan-fry on medium high heat until golden. Remove
- Add 2 tablespoons oil. Pan-fry cauliflower until lightly coloured. Add garlic, and both fingers.
- Add tofu, lime, sugar, salt and fish sauce and toss together.
- If kids will eat onions add it now and give a final toss.
Serve

- Chili flakes
- Rice powder
- Yum Phrik
- A plate of lettuce + herbs
I prefer making little lettuce wraps- lettuce topped with the cauliflower+tofu, fresh herbs, a sprinkle of rice powder and chili flakes then finished with Yum Phrik.
