Mexican Bean Salad

Ingredients

Tick things off as you go.

• 1 can black beans, rinsed and drained
• 1 small can corn, rinsed and drained
• 1 red paprika, cubed
• 2 tomatoes, cubed
• 1 red onion, finely sliced and soaked in water
• 10 g parsley, finely chopped
• 10 g coriander, finely chopped
• 75 g rocket
• 30 ml olive oil
• 1 tsp Smokin Senorita
• 1 lime, juiced
• Salt and pepper to taste

Method

Tap a step when it's done.

1. Mix the olive oil, lime juice and Smokin Senorita.
2. Toss all the ingredients together and dress with the dressing.
3. Taste and adjust the seasoning with salt and pepper.
