Mexican Bean Salad

Ingredients
- 1 can black beans rinsed and drained
- 1 small can corn rinsed and drained
- 1 red paprika cubed
- 2 tomatoes cubed
- 1 red onion finely sliced, soaked in water
- 10 grams parsley finely chopped
- 10 grams coriander finely chopped
- 75 grams rocket
- 30 mL olive oil
- 1 tsp Smokin Senorita
- 1 lime juiced
- salt and pepper to taste
Instructions
- Mix olive oil, lime juice and Smokin Senorita
- Toss all ingredients together and dress with dressing.
- Taste and adjust seasoning with salt and pepper.
