Lemon Shrimp Spaghetti

It's getting warmer, this delicious pasta comes together in minutes, why not enjoy it on the terrace in the evening sun. 

Ingredients

  • 400g spaghetti
  • 400g shrimp (peeled & deveined)
  • 3 tbsp Yum Phrik chilli oil
  • 4 cloves garlic, sliced or minced
  • Zest and zest of 1 lemon
  • 1 small bunch fresh coriander, finely sliced (or parsley if preferred)
  • 1⁄2 cup reserved pasta water

Method

  1. Cook the pasta in salted water until al dente. Reserve 1⁄2 cup of the pasta water before draining.
  2. In a large pan, heat Yum Phrik chilli oil (no crispy bits) over low heat. Add garlic and sauté until fragrant.
  3. Add reserved pasta water and bring to a simmer.
  4. Add shrimp and cook until just pink.
  5. Stir in the chopped coriander.
  6. Toss in the drained pasta, lemon zest, and lemon juice, mixing well.
  7. Serve immediately with extra Yum Phrik including crispy bits drizzled over.
