
Lemon Shrimp Spaghetti
It's getting warmer, this delicious pasta comes together in minutes, why not enjoy it on the terrace in the evening sun.
Ingredients
- 400g spaghetti
- 400g shrimp (peeled & deveined)
- 3 tbsp Yum Phrik chilli oil
- 4 cloves garlic, sliced or minced
- Zest and zest of 1 lemon
- 1 small bunch fresh coriander, finely sliced (or parsley if preferred)
- 1⁄2 cup reserved pasta water
Method
- Cook the pasta in salted water until al dente. Reserve 1⁄2 cup of the pasta water before draining.
- In a large pan, heat Yum Phrik chilli oil (no crispy bits) over low heat. Add garlic and sauté until fragrant.
- Add reserved pasta water and bring to a simmer.
- Add shrimp and cook until just pink.
- Stir in the chopped coriander.
- Toss in the drained pasta, lemon zest, and lemon juice, mixing well.
- Serve immediately with extra Yum Phrik including crispy bits drizzled over.
