Festive Roast Butternut & Tomatoes

The perfect festive side—delicious on its own or served on creamy hummus!

Festive Roast Butternut & Tomatoes

  • 1 small butternut pumpkin (or half a large one)
  • 250g cherry tomatoes, halved 🍅
  • 1 tsp za’atar spice mix 🌿
  • 3 tbsp olive oil (or oil from Çitir Biber)
  • Çitir Biber to taste 🌶️
  • Optional: flat-leaf parsley & hummus

1️⃣ Preheat oven to 200°C (fan) or 220°C. Peel & cube squash (2x2 cm), toss with 2 tbsp oil, salt, & pepper. Roast 20 min.
2️⃣ Add halved tomatoes, sprinkle with za’atar, & drizzle with remaining oil. Roast 25 min.
3️⃣ Serve on creamy hummus with parsley & a drizzle of Çitir Biber—or enjoy as-is!

Because boring veggies just don’t cut it! 🍴
