5 Minute Coconut Noodle Soup Recipe

Whip up this chill coconut noodle soup in a snap. No werid ingredients, no added junk, no tongue-twisting preservatives! I make this for myself for a quick weekday lunch, but you can easily increase the recipe for a perfect midweek meal! 

Ingredients (per serve, multiply it to make more, but for me this is a quick working lunch)

  • 1 spoon Yum Phrik
  • 100mL Coconut Milk (check ingredients for clean label)
  • 100mL Water
  • squeeze Lime juice
  • splash Soy Sauce
  • Noodles - choose your favourite
  • Greens - I love pak choi or bok choi here
  • Tofu - Tofumeisjes fried tofu give amazing texture, but use whatever protein you like

Method

  • Put noodles on to cook per package instructions
  • Heat a spoonful of Yum Phrik in a pan
  • Add coconut milk, mix well and come to temp
  • Add water. 
  • Add your favourite greens, and protein
  • Simmer 2 minutes. 
  • Taste and adjust seasoning with lime, soy sauce, and salt. 
  • Pour over cooked noodles. 
  • Enjoy!
